Huevos Rancheros is a classic morning favorite that brings the heart of the Mexican kitchen to your breakfast plate. Our version pairs crispy fried tortillas with perfectly cooked eggs simmered right in Amor Salsita’s Homemade Authentic Salsas. Top it off with avocado, cheese, or fresh cilantro for a vibrant, satisfying meal that starts your day with flavor and love.
Ingredients
3 small corn tortillas
3 large eggs
1 container of Amor Salsita (mild or your preferred flavor)
1 cup of avocado oil (for frying)
Optional toppings: sliced avocado, crumbled cotija cheese, fresh cilantro
Preparation
1. Pour about 1 cup of cooking oil into a small frying pan. Heat it over medium-high heat until the oil starts to bubble.
2. Carefully place a tortilla in the hot oil. Hold it down with tongs or a spatula to keep it flat so it cooks evenly. The longer you keep it in, the crispier it will become. The edges will start to curl up when it's ready.
3.Remove the tortilla and place it on a plate to cool and drain.
4. In a separate pan, pour in one container of salsa and place it over medium heat.
5. Let the salsa heat for a couple of minutes, then crack 3 eggs directly into the pan.
6. Cover the pan with a lid and let it cook for 3 to 5 minutes, or until the egg whites are fully cooked and the eggs look how you like them.
7.Once the egg is cooked to your liking, place one on each crispy tortilla.
8. Add your desired toppings and enjoy.
