Chicken Enchiladas

There’s something undeniably comforting about a tray of freshly baked enchiladas—but when you layer them with Amor Salsita’s Homemade Authentic Salsas, the flavor reaches a whole new level. This recipe combines tender shredded chicken, melty cheese, and a duo of our signature salsas for a meal that’s both nostalgic and unforgettable. Perfect for family dinners or casual gatherings, this dish brings the love and spice of a traditional Mexican kitchen straight to yours.

Ingredients

  • 2 cups shredded cooked chicken

  • 1 cup shredded cheese (cheddar or Mexican blend)

  • 8 corn tortillas

  • 1 cup Salsa Roja

  • 1 cup Tomatillo Salsa

  • 1 cup sour cream

  • 1 tablespoon chopped cilantro (optional)

Preparation


  1. Preheat the oven to 375°F (190°C).

  2. Warm the tortillas in the microwave to make them pliable.

  3. Spread a small amount of red salsa in the bottom of a baking dish.

  4. Fill each tortilla with shredded chicken and a little cheese, then roll up and place seam-side down in the baking dish.

  5. Pour the red salsa over half of the enchiladas and the green salsa over the other half.

  6. Sprinkle the remaining cheese on top.

  7. Bake for 20-25 minutes or until the cheese is melted and bubbly.

  8. Serve with sour cream and chopped cilantro.
